Vanilla Chia Granola Blueberry Parfaits

Lemon zest sharpens the yogurt without adding extra juice to the layers. Vanilla chia granola supplies the crunchy base note, and blueberries add little bursts of fruit between spoonfuls.

Ingredients

Amounts above are for cooking. Products are sold in retail packages; pantry extras may be needed.

Method

  1. Dry the berries

Rinse blueberries in a colander, then spread on a clean towel for 1 minute. Remove any stems and pat away surface water.

  2. Scent the yogurt

Stir lemon zest into the cold yogurt for 15 seconds. Avoid grating the white pith, which can make the yogurt taste bitter.

  3. Build two layers

Divide half the yogurt between two jars. Add half the berries and granola, then repeat with the remaining ingredients.

  4. Finish and serve

Place a few berries on top and serve immediately. The granola should still break into distinct crunchy pieces when pressed with a spoon.

Kitchen tips

Use wide jars so it is easy to reach the lower layers without compacting them.

Add zest, not lemon juice, if you want to preserve the yogurt thickness.

Substitutions

Use plain dairy-free yogurt for a variation without added dairy, checking the granola label as well.

Select a vanilla granola labeled gluten-free if needed and verify all ingredients; the original recipe makes no diet certification.

Storage

For advance preparation, chill fruit and yogurt up to 2 days and carry granola separately.

Serving suggestions

Serve in two clear glasses or jars with teaspoons, letting the layers remain visible until the first bite.

Make ahead

Keep lemon yogurt and blueberries refrigerated in separate containers for up to 2 days. Pack granola dry and layer immediately before eating.

Frequently asked questions

Can I use frozen blueberries?

Yes. Thaw and drain them first; they will tint the yogurt purple and make softer layers than fresh berries.

Can I mix everything in one bowl?

Certainly. The layered presentation is optional; add the granola last so it retains its crunch.
