Mango Coconut Cashew Granola Parfait

Mango and lime bring a bright edge to the coconut and cashew clusters. The granola supplies the substantial crunch, so it goes in between layers only when you are ready to eat.

Ingredients

Amounts above are for cooking. Products are sold in retail packages; pantry extras may be needed.

Method

  1. Zest the lime

Wash and dry the lime, then grate 1 teaspoon of zest without the bitter white pith. Stir it into the yogurt for about 20 seconds.

  2. Dice the mango

Peel the mango and cut flesh away from the pit. Dice into 1/2-inch pieces; measure 1 cup, leaving behind any tough fibers.

  3. Start the layers

Divide half the yogurt between two wide glasses. Add half the mango and half the granola, keeping the clusters loosely piled.

  4. Finish the parfaits

Repeat the layers and place a few mango pieces on top. Serve immediately, while the middle granola layer still has a distinct crunch.

Kitchen tips

Dry any juice from the cutting board before scooping fruit into the glasses.

Break only the largest clusters so each layer remains easy to eat with a spoon.
