Pineapple Coconola Breakfast Bowls

Pineapple and lime make a sharp, juicy topping for the coconut-rich clusters. Keeping the fruit separate until assembly lets the coconola remain the substantial, crisp part of each bowl.

Ingredients

  • 1 cup original coconolaGrandy Oats: USDA Organic
  • 1 cup plain yogurt
  • 1 cup diced pineapple
  • 1 teaspoon lime juice
  • 1 tablespoon chopped fresh mint

Amounts above are for cooking. Products are sold in retail packages; pantry extras may be needed.

Method

  1. Dry the pineapple

Measure 1 cup diced pineapple and drain any pooled juice. If using canned fruit, pat it dry so it will not thin the yogurt.

  2. Dress the fruit

Toss pineapple with lime juice and half the chopped mint for 15 seconds. Taste a piece and keep the dressing light rather than pooling.

  3. Divide the yogurt

Spoon cold yogurt into two bowls. Add dressed pineapple on top, leaving some yogurt visible at the edges.

  4. Finish with clusters

Scatter coconola and remaining mint over each bowl. Serve immediately while the clusters are dry and the fruit is cool.

Kitchen tips

Drain pineapple thoroughly before dressing it; excess juice quickly softens the clusters.

Tear mint shortly before serving so the edges stay fresh-looking.

Substitutions

Use plain dairy-free yogurt for a milk-free variation, while checking the coconola label for its other allergens.

Replace pineapple with drained orange segments and reduce the lime juice if the oranges are tart.

If avoiding gluten, choose a comparable granola explicitly labeled gluten-free and check the other ingredients; the original version is not certified here.

Storage

Refrigerate fruit and yogurt separately for up to 2 days; keep coconola dry.

Serving suggestions

Set the bowls out with extra mint and a small dish of pineapple for a fruit-forward breakfast.

Make ahead

Dice and refrigerate pineapple up to 2 days ahead. Store yogurt separately, and dress the fruit and add mint and clusters at serving time.

Frequently asked questions

Can I use pineapple juice in the yogurt?

A small splash is possible, but it will loosen the texture. Drain the fruit for the thick bowl described here.

Does a yogurt swap remove the nuts?

No. The original coconola contains cashews, pecans, sesame and coconut, which remain regardless of the yogurt choice.
