Sprouted buckwheat adds a crisp, nutty-tasting bite without needing to be cooked in this topping. Peaches and yogurt form the soft base, while pumpkin seeds add another layer of crunch.

Ingredients
3/4 cup cinnamon sprouted buckwheat crunchLil Bucks: USDA Organic- 1 cup plain yogurt
- 2 ripe peaches, diced
1 tablespoon pumpkin seedsWoodstock: USDA Organic
Amounts above are for cooking. Products are sold in retail packages; pantry extras may be needed.
Method
Prepare the peaches
Wash, pit and dice the peaches into 1/2-inch pieces. Choose ripe fruit that holds its shape rather than collapsing when cut.
Spoon the yogurt
Divide cold yogurt between two bowls and spread into a shallow layer. This gives the fruit and dry toppings room to sit on top.
Add the fruit
Scatter diced peaches evenly over the yogurt. Leave any extra juice on the cutting board so the bowl stays thick.
Finish with crunch
Divide the buckwheat topping and pumpkin seeds between the bowls. Serve immediately while both dry ingredients remain crisp.
Kitchen tips
Use the buckwheat as a ready-to-eat topping rather than soaking it like rolled oats.
Taste the peaches before assembling; very tart fruit can change the balance more than the cinnamon topping does.
Substitutions
Use plain dairy-free yogurt for a variation without added milk, checking the seed and buckwheat labels too.
If avoiding gluten, choose buckwheat and seed toppings labeled gluten-free; ripe plums can replace peaches without changing the assembly.
Storage
Keep fruit and yogurt chilled separately for up to 1 day; add dry toppings at serving time.
Serving suggestions
Serve with extra peach slices and a spoon, keeping a little buckwheat on the side to add midway through the bowl.
Make ahead
Dice fruit and refrigerate it separately from the yogurt for up to 1 day. Add the buckwheat and seeds only at the table.

Should I boil the buckwheat topping?
No. This recipe uses the ready-to-eat cinnamon product as a crunchy topping; uncooked raw groats are not an equivalent substitution.
Can I use frozen peaches?
Yes. Thaw in the refrigerator and drain thoroughly. The fruit will be softer, so keep the crunchy toppings separate until serving.
