Maple Pecan Overnight Oats
Rolled oats soften slowly in milk and yogurt, creating a creamy base without cooking. Maple syrup brings a rounded sweetness, and pecans go on at the end so their crispness survives the overnight soak.

Ingredients
1 cup sprouted rolled oatsOne Degree Organic Foods: USDA Organic- 1 cup milk
- 1/2 cup plain yogurt
2 tablespoons maple syrupShady Maple Farms: USDA Organic
1/4 teaspoon cinnamonMorton & Bassett: USDA Organic- 1/4 cup chopped pecans
Amounts above are for cooking. Products are sold in retail packages; pantry extras may be needed.
Method
Combine the liquids
In a lidded container, stir milk, yogurt, maple syrup and cinnamon for 20 seconds. Break up any yogurt lumps before adding the oats.
Fold in oats
Stir in the full cup of rolled oats until every flake is wet. Scrape the sides so no dry oats remain above the liquid.
Chill the mixture
Cover and refrigerate at 40°F or below for at least 8 hours. The oats should feel soft when tasted, with no dry or chalky center.
Loosen before serving
Stir the chilled oats for 15 seconds. Add milk a tablespoon at a time only if the mixture is thicker than you like.
Top the bowls
Divide between two bowls and sprinkle with chopped pecans just before eating. Keep any unserved portion refrigerated and use within 2 days.
Kitchen tips
Use rolled oats; steel-cut oats will remain too firm in this cold preparation.
Add the nuts at serving time so they stay crisp rather than soaking with the oats.
Substitutions
Use plain dairy-free yogurt and an unsweetened plant beverage in place of the dairy ingredients; check all labels.
For a gluten-free variation, use rolled oats labeled gluten-free and verify the other ingredients; this is not a certification of the original recipe.
Storage
Keep refrigerated and eat within 2 days. Do not leave on the counter to soak.
Serving suggestions
Serve chilled with sliced pear or a small cup of coffee; keep the maple syrup on the table for individual adjustment.
Make ahead
This recipe is intended for an overnight chill. Prepare up to 2 days ahead, keep at 40°F or below and add pecans only before serving.

Can I use steel-cut oats instead?
No, not with the same cold-soak method. Cook steel-cut oats according to their label, cool promptly and refrigerate before adding toppings.
Can I warm overnight oats?
Transfer a portion to a microwave-safe bowl, loosen with milk and heat in short bursts, stirring until hot throughout. Add the nuts afterward.
