Cream of Buckwheat with Maple Pears
Finely milled buckwheat cooks into a smoother porridge than whole buckwheat groats. Fresh pear adds small, juicy bites while maple and cinnamon round out the grain flavor without a complicated topping.

Ingredients
1/2 cup cream of buckwheatPocono: USDA Organic- 2 cups water
- 1 ripe pear, diced
1 tablespoon maple syrupShady Maple Farms: USDA Organic
1/4 teaspoon cinnamonMorton & Bassett: USDA Organic- 2 tablespoons milk
Amounts above are for cooking. Products are sold in retail packages; pantry extras may be needed.
Method
Dice the pear
Wash and core the pear, then cut it into small 1/4-inch cubes. Set aside while the water comes to a boil.
Whisk in buckwheat
Bring water to a boil in a heavy saucepan. Add cream of buckwheat gradually in a thin stream while whisking to keep lumps from forming.
Simmer until smooth
Reduce to low heat and cook for 10 to 12 minutes, stirring frequently. The grain should taste tender and the porridge should fall softly from the spoon; follow any longer label time.
Stir in milk
Remove from heat and stir in milk for 15 seconds. If the porridge is very thick, loosen it with a tablespoon of hot water.
Finish with fruit
Divide between two bowls and add pear, maple syrup and cinnamon. Let cool for 1 minute before tasting the thick center.
Kitchen tips
Whisk while adding the dry grain rather than trying to break up lumps after the pot thickens.
Use a heavy saucepan and sweep the spoon across its base frequently near the end.
Substitutions
Use an unsweetened plant beverage instead of the finishing milk for a dairy-free variation.
If avoiding gluten, check that the buckwheat product is labeled gluten-free and verify the other ingredients rather than inferring certification from the grain name.
Storage
Refrigerate within 2 hours for up to 2 days; reheat with a splash of water.
Serving suggestions
Serve in warm bowls with the pear on top and a small jug of milk or plant beverage for loosening.
Make ahead
Refrigerate cooked porridge within 2 hours for up to 2 days. Reheat with water until steaming and add freshly diced pear afterward.

Can I use whole buckwheat groats?
Not with this method or timing. Whole groats need a different cooking process and will not produce the same smooth porridge.
How can I fix lumps?
Whisk firmly over low heat with a little extra hot water. For the next batch, add the grain slowly while stirring continuously.
