Chocolate Peanut Butter Banana Breakfast Bites
Crushed granola gives these soft bites a toasted base with little pockets of chocolate. Banana and peanut butter bind the mixture, while a coating of whole clusters adds contrast.

Ingredients
1 1/2 cups dark chocolate peanut butter granolaNature's Path: USDA Organic
1/3 cup smooth peanut butterWoodstock: USDA Organic- 1/2 small ripe banana, mashed (about 1/4 cup)
1 tablespoon honeyWholesome: USDA Organic- 1/8 teaspoon salt
Amounts above are for cooking. Products are sold in retail packages; pantry extras may be needed.
Method
Crush the clusters
Reserve 1/4 cup granola. Crush the rest in a sealed bag with a rolling pin for 30 to 45 seconds, leaving crumbs and pea-size pieces.
Mix the binder
Mash the banana smooth, then stir in peanut butter, honey and salt for 1 minute. The mixture should look thick and evenly blended.
Hydrate the crumbs
Fold crushed granola into the binder until no dry crumbs remain. Leave for 5 minutes so the cereal absorbs some banana moisture.
Shape the bites
Divide into 12 equal mounds and roll gently with lightly damp hands. Press reserved granola onto the surfaces; the bites will still feel soft.
Chill until firm
Cover and refrigerate at 40°F or below for 30 minutes, until the bites lift cleanly from the plate. Keep chilled until serving.
Kitchen tips
Measure mashed banana rather than using a whole large banana, which can make the mixture loose.
Use a small scoop to portion evenly before rolling; do not keep adding dry cereal to a sticky mixture.
Substitutions
Use maple syrup in place of honey, adding it slowly if the peanut butter is very fluid.
For a gluten-free variation, select a labeled gluten-free chocolate granola and check the remaining ingredients; peanut butter is still present.
Storage
Keep covered in the refrigerator for up to 2 days.
Serving suggestions
Put two or three chilled bites beside fresh fruit and yogurt rather than treating the whole batch as one serving.
Make ahead
Make the bites a day ahead and refrigerate in a covered container. Use within 2 days because the binder contains fresh banana.
Allergen details
Contains: peanuts, soy (if present in the granola; check the label).
Check each product label for allergen details.

Why will the bites not hold together?
They may need more chilling or the banana may have been oversized. Chill for 10 minutes before shaping, then compress each portion gently.
Can I make these without peanuts?
Use a peanut-free granola as well as a different seed butter. Changing only the binder leaves peanuts in the original granola.
