Cacao Rice Crisp Banana Breakfast Clusters
Cacao rice crisps give these clusters a light structure while peanut butter holds them together. Finely chopped banana chips add a separate crunch without introducing fresh-fruit moisture into the binder.

Ingredients
2 cups cacao rice crispsOne Degree Organic Foods: USDA Organic
1/3 cup smooth peanut butterWoodstock: USDA Organic
2 tablespoons honeyWholesome: USDA Organic- 1/4 cup finely diced dried banana chips
Amounts above are for cooking. Products are sold in retail packages; pantry extras may be needed.
Method
Prepare the tray
Line a small tray with parchment. Chop banana chips into pea-size pieces so they can sit inside small clusters rather than breaking them apart.
Loosen the binder
Warm peanut butter and honey in a small saucepan over low heat for about 2 minutes, stirring until fluid. Remove from heat before bubbling.
Fold in crisps
Add rice crisps and banana chips, folding gently for 30 seconds until coated. Avoid crushing the cereal into powder.
Portion the clusters
Scoop 12 mounds onto the tray and press each together lightly with two spoons. They should hold as mounds but will still feel soft.
Chill before serving
Cover and refrigerate at 40°F or below for 45 minutes. Serve cold once the binder is firmer; these remain soft clusters rather than brittle candy.
Kitchen tips
Use small pieces of banana chip so each cluster can compact without a large hard shard in the middle.
If peanut butter is very runny, chill the coated mixture briefly before portioning rather than adding extra honey.
Substitutions
Replace banana chips with finely chopped dried apricots for a softer, tart contrast.
Use label-checked sunflower seed butter instead of peanut butter; if avoiding gluten, verify the rice cereal and all other products are labeled appropriately.
If avoiding gluten, choose a comparable cereal or oat base explicitly labeled gluten-free and check the other ingredients; the original version is not certified here.
Storage
Keep covered in the refrigerator for up to 4 days.
Serving suggestions
Serve a few clusters with sliced banana or an orange; use a small plate because the clusters can shed loose crisps.
Make ahead
Chill the clusters a day ahead and store covered in the refrigerator for up to 4 days. Keep layers separated with parchment.

Can I use fresh banana?
Fresh banana adds moisture and changes how long the clusters keep. Use the dried banana chips specified for this version.
Are these firm enough for lunchboxes?
They soften at room temperature. Carry them chilled and use a small container rather than wrapping them as rigid cereal bars.
