Worcestershire Mushroom Lentil Skillet

The assigned Worcestershire sauce adds tamarind tang and a savory soy note to browned mushrooms. Sprouted lentils cook separately so their texture stays distinct in the pan sauce.

Ingredients

Amounts above are for cooking. Products are sold in retail packages; pantry extras may be needed.

Method

  1. Cook the lentils

Bring 2 cups water to a boil. Add lentils and simmer for 8 to 12 minutes or according to the current package until tender throughout, adding water and time if needed. Drain well while preparing the skillet.

  2. Brown the mushrooms

Heat oil in a large skillet over medium-high heat. Add mushrooms in an even layer and cook for 8 minutes, turning occasionally, until browned and their released moisture has mostly evaporated.

  3. Build savory sauce

Reduce heat to medium, add onion and cook for 6 minutes until soft; stir in garlic for 1 minute. Whisk Worcestershire sauce, 1/2 cup water and cornstarch separately, then pour into the skillet.

  4. Fold and simmer

Add cooked lentils and pepper. Simmer gently for 3 to 4 minutes, stirring, until the sauce lightly coats a spoon and the lentils are steaming throughout. Finish with parsley and taste before adding any salt.

Kitchen tips

Give mushrooms room to brown; a crowded small pan traps moisture.

Whisk cornstarch into cool water before adding it to prevent lumps.

Substitutions

Use cooked green lentils instead of dry sprouted lentils; measure about 1 1/4 cups cooked and skip their boiling step.

For gluten-free or dairy-free needs, check the exact sauce, starch and lentil labels. Other Worcestershire brands may contain wheat, fish or different allergens.

Storage

Cool in a shallow container and refrigerate within 2 hours at 40°F or below for up to 3 days. Reheat until steaming, loosening with a little water.

Serving suggestions

Serve as two savory dinner bowls; add a separately prepared starch or vegetable if desired.

Make ahead

Cook lentils and slice mushrooms a day ahead and refrigerate separately. Brown mushrooms and finish the sauce just before dinner.

Frequently asked questions

Does every Worcestershire sauce have the same ingredients?

No. The assigned Wizard sauce lists tamari made with soybeans and does not list anchovies in the supplied ingredients. Recheck the actual bottle; other brands may contain fish or wheat.

Should I add salt at the start?

Wait until the sauce is hot and reduced. Worcestershire already brings salt, so the final amount depends on your bottle and any substitutions.
