Savory Tomato Seed and Grain Oatmeal
Unsweetened seed and grain oatmeal becomes a savory bowl when cooked with softened tomatoes. Feta adds a salty finish, while the grain mixture thickens the tomato juices into a spoonable base.

Ingredients
1 packet seed and grain oatmeal (about 1/3 cup)Nature's Path: USDA Organic- 3/4 cup water
- 1/2 cup cherry tomatoes, halved
- 1 teaspoon olive oil
- 1 tablespoon crumbled feta
- 1 tablespoon chopped scallion
Amounts above are for cooking. Products are sold in retail packages; pantry extras may be needed.
Method
Prepare the vegetables
Halve the cherry tomatoes and finely slice the scallion. Keep the scallion separate for a fresh finish after cooking.
Soften the tomatoes
Warm olive oil in a small saucepan over medium heat. Add tomatoes and cook for 3 minutes, pressing a few until they release juice.
Simmer the grain
Add water and bring to a simmer. Stir in oatmeal and lower the heat; cook 3 to 5 minutes, stirring often, or longer if its packet requires.
Judge the thickness
The grains should be tender and the mixture should mound softly on a spoon. Add a tablespoon of hot water if it becomes stiff before the grains soften.
Finish off heat
Remove from heat and stand for 1 minute. Spoon into a bowl, add crumbled feta and scallion, and serve while warm.
Kitchen tips
Use the plain seed and grain packet rather than a sweetened flavored oatmeal.
Taste before adding salt because feta can season the whole bowl on its own.
Substitutions
For a dairy-free version, omit feta and add a spoonful of mashed white beans with a pinch of salt.
Plain quick oats can replace the grain packet; follow their liquid and cooking directions and choose a labeled gluten-free option if needed.
Storage
Refrigerate within 2 hours and use within 2 days; loosen with water when reheating.
Serving suggestions
Offer a small dish of chopped cucumber alongside the warm oats for a cool, crisp contrast.
Make ahead
Cook the oats and tomatoes up to 2 days ahead and refrigerate within 2 hours. Reheat until steaming, loosening with water, and add feta and scallion afterward.

Can I use a large tomato?
Yes. Dice about 1/2 cup and include its juices; simmer a little longer if the tomato is very watery.
Can I replace feta with Parmesan?
Yes, use a smaller spoonful of finely grated Parmesan and taste before adding more because its saltiness is concentrated.
