Pumpkin Seed Parsley Pasta
Shelled pumpkin seeds give this parsley sauce body without cheese or cream. Toasting them first adds a deeper flavor, while starchy pasta water loosens the sauce around the noodles.

3/4 cup shelled unsalted pumpkin seedsWoodstock: USDA Organic- 2 packed cups flat-leaf parsley leaves and tender stems, washed and dried
- 1 small garlic clove, roughly chopped
3 tablespoons olive oilBragg: USDA Organic- 2 tablespoons fresh lemon juice
- 1/2 teaspoon fine salt, plus 2 teaspoons for pasta water
- 1/4 teaspoon black pepper
- 12 ounces dry wheat spaghetti
- 1/2 to 3/4 cup reserved hot pasta cooking water
Amounts above are for cooking. Products are sold in retail packages; pantry extras may be needed.
Method
Toast the seeds
Heat a dry skillet over medium-low heat. Stir pumpkin seeds for 3 to 4 minutes until fragrant and a few begin to pop; spread on a plate to stop cooking while a large pot of water comes to a boil.
Cook the spaghetti
Salt the boiling water with 2 teaspoons salt. Cook spaghetti according to its package, usually 9 to 11 minutes, until tender with a slight bite. Reserve 1 cup cooking water before draining.
Blend parsley sauce
While pasta cooks, pulse toasted seeds, parsley, garlic, oil, lemon juice, 1/2 teaspoon salt and pepper in a food processor. Add 1/4 cup reserved pasta water and process to a coarse paste; stop and scrape the bowl as needed.
Coat and serve
Return drained pasta to the warm pot off heat and toss with the sauce. Add another 1/4 to 1/2 cup cooking water gradually until it coats the strands without pooling. Divide among four bowls and serve promptly.
Kitchen tips
Dry parsley well so the sauce tastes bright rather than watery.
Reserve pasta water before draining; its starch helps the seed sauce cling without adding more oil.
Substitutions
Use labeled gluten-free spaghetti if needed, cooking by its package and checking seed and seasoning labels too.
No dairy is added. For dairy-free needs check the pasta and all packaged ingredients; avoid adding cheese unless it suits everyone at the table.
Storage
Refrigerate leftover pasta within 2 hours at 40°F or below for up to 3 days. Reheat until steaming throughout with a splash of water; parsley will darken.
Serving suggestions
Serve as a warm dinner pasta with sliced tomatoes on the side. Toss once more before portioning so seeds do not settle at the bottom.
Make ahead
Toast seeds a day ahead and store airtight once cool. Blend and combine the sauce near serving time to preserve its fresh parsley flavor.

Is this sauce smooth like cream?
No, it is deliberately coarse with tiny seed pieces. Blend longer and add water a tablespoon at a time if you prefer a looser texture.
Can I make it without a food processor?
Finely chop the seeds, parsley and garlic with a knife, then stir in the oil, lemon juice and hot pasta water. The sauce will be chunkier.
