Fennel Seed Roasted Carrots
Crushed fennel seed adds a mild licorice aroma to carrots as their edges brown. Honey goes on near the end so it glazes the vegetables without scorching through the full roast.

1 tablespoon olive oilBragg: USDA Organic
1 teaspoon honeyWholesome: USDA Organic- 1/4 teaspoon salt
- 1 tablespoon lemon juice

Method
Heat and crush
Heat the oven to 425°F and line a rimmed sheet pan with parchment rated for that temperature. Coarsely crush fennel seeds with a mortar or the bottom of a heavy cup.
Season the carrots
Toss carrot sticks with oil, fennel and salt. Spread in a single layer with space between pieces, using a second pan if necessary.
Roast and glaze
Roast for 20 minutes, turning once. Drizzle with honey, toss carefully and roast another 5 to 10 minutes until browned at the edges and easily pierced with a fork.
Finish with lemon
Transfer to a serving bowl and toss with lemon juice. Taste a carrot after it cools slightly; serve warm, scraping the fennel-speckled juices over the top.
Kitchen tips
Cut thick ends lengthwise to match thinner sticks for even roasting.
Add honey late and watch the last few minutes because sweet glazes brown quickly.
Substitutions
Use maple syrup instead of honey for a different sweetness.
For dairy-free or gluten-free needs, check the spice and sweetener labels; neither dairy nor wheat is added to this preparation.
Storage
Refrigerate within 2 hours at 40°F or below for up to 3 days. Reheat leftovers to 165°F before serving hot.
Serving suggestions
Serve a quarter of the tray alongside a main dish, or add warm carrots to a grain bowl with beans.
Make ahead
Peel and cut carrots a day ahead and refrigerate covered. Crush seeds shortly before roasting to keep their aroma.

Do fennel seeds need to be ground finely?
No. Coarse crushing releases aroma while leaving small specks; whole uncrushed seeds may feel hard in a bite.
Why are the carrots pale and soft?
A crowded pan traps steam. Spread the sticks with space around them and use a second pan if needed.
