Ingredients
1 cup chocolate chip pancake and waffle mixBirch Benders: USDA Organic- 3/4 cup water, adjusted to package waffle directions
- 1 tablespoon neutral oil, plus oil for iron
- 1 banana, thinly sliced
1 tablespoon maple syrupShady Maple Farms: USDA Organic
Amounts above are for cooking. Products are sold in retail packages; pantry extras may be needed.
Method
Heat the iron
Preheat the waffle iron according to its instructions and lightly oil the plates. Keep a rack nearby so cooked waffles do not steam on a flat plate.
Stir the batter
Mix the waffle mix with water and oil, following the current package waffle proportions if they differ. Stir just until combined; do not taste raw batter.
Cook until crisp
Cook in batches for 3 to 5 minutes each, or according to the iron, until steam slows and the waffles are browned with no wet batter. Allow up to 15 minutes for all batches.
Build the sandwiches
Cut waffles into eight small pieces. Sandwich banana between pairs, drizzle with maple syrup and serve at once while the outside is still crisp.
Kitchen tips
Use the iron measuring cup to prevent batter overflow.
Let each waffle stand on the rack for a minute before slicing.
Substitutions
Use sliced strawberries instead of banana and pat them dry first.
For a gluten-free variation choose a labeled gluten-free chocolate chip waffle mix and follow its own liquid directions; recheck dairy ingredients for a dairy-free variation.
Storage
Refrigerate waffles and sliced banana separately within 2 hours for up to 2 days at 40°F or below; toast waffles before assembling.
Serving suggestions
Serve small triangles on a plate with extra fresh fruit, keeping syrup on the side for dipping.
Make ahead
Cook waffles a day ahead and refrigerate. Recrisp in a toaster or 350°F oven until hot; slice the banana just before assembling.

Can pancake batter go straight into the waffle iron?
Use the current package waffle directions, which may call for different water or oil amounts than pancakes.
Why are my sandwiches soggy?
Hot waffles stacked together trap steam. Rest them on a rack and add banana and syrup only when ready to serve.
