Chipotle Habanero Lime Slaw

Ingredients
- 4 cups finely shredded cabbage
- 1 cup grated carrot
1 teaspoon chipotle habanero pepper sauce, plus more to tasteOrganic Harvest Foods: USDA Organic- 2 tablespoons lime juice
1 tablespoon olive oilBragg: USDA Organic
1 teaspoon honeyWholesome: USDA Organic- 1/4 teaspoon salt
- 2 tablespoons chopped cilantro
Amounts above are for cooking. Products are sold in retail packages; pantry extras may be needed.
Method
Shred the vegetables
Remove the cabbage core and slice the leaves very thinly. Combine with grated carrot in a large bowl, discarding any tough pieces.
Whisk the dressing
Stir pepper sauce, lime juice, olive oil, honey and salt until the honey dissolves. Start with 1 teaspoon sauce because habanero heat varies.
Toss and rest
Pour over the vegetables and toss thoroughly for a minute. Refrigerate for 10 minutes to let the cabbage soften slightly while staying crunchy.
Finish to taste
Add cilantro and toss again. Taste a small forkful before adding more sauce in 1/4-teaspoon increments; serve cold with clean utensils.
Kitchen tips
Cut cabbage thinly so dressing reaches every strand.
Wash hands after handling the hot sauce bottle and avoid touching eyes.
Substitutions
Use maple syrup instead of honey if desired, keeping the quantity small.
For gluten-free or dairy-free needs, verify all sauce labels; no wheat flour or dairy is added to this slaw.
Storage
Refrigerate covered at 40°F or below for up to 2 days; do not leave out longer than 2 hours, or 1 hour above 90°F.
Serving suggestions
Spoon alongside tacos or grilled vegetables rather than under hot food, which quickly wilts the cabbage.
Make ahead
Shred vegetables and mix dressing separately a day ahead; refrigerate both and toss 10 minutes before serving.
