Ingredients
2 cups Bunny Grahams, crushedAnnie's Homegrown: USDA Organic- 4 tablespoons melted unsalted butter
1/2 cup semi-sweet chocolate chipsEqual Exchange: USDA Organic- 1 cup mini marshmallows
Amounts above are for cooking. Products are sold in retail packages; pantry extras may be needed.
Method
Press the base
Heat the oven to 350°F. Line an 8-inch square pan with parchment; combine fine graham crumbs with melted butter and press firmly into an even layer.
Set the crust
Bake for 6 minutes until fragrant and lightly firm at the edges. Set the pan on a heat-safe surface; leave the oven on.
Melt the toppings
Scatter chocolate chips and marshmallows over the hot base. Bake for another 3 to 4 minutes until chocolate softens and marshmallows puff; watch closely and do not broil.
Cool and slice
Cool in the pan for 60 minutes until chocolate firms enough to cut. Lift out with parchment and slice into nine small squares using a lightly oiled knife.
Kitchen tips
Crush crumbs finely so the small base holds together after cooling.
Do not cut while chocolate is liquid; the topping will slide off.
Substitutions
Use dairy-free baking butter and dairy-free chocolate for a dairy-free variation only after checking the grahams and marshmallows too.
For a gluten-free variation replace Bunny Grahams with labeled gluten-free graham-style cookies; the assigned product contains wheat and barley ingredients.
Storage
Store covered in the refrigerator at 40°F or below for up to 3 days; let a portion stand for 5 minutes before serving.
Serving suggestions
Serve one small square per person with fresh berries. Keep these away from direct heat so the chocolate layer stays set.
Make ahead
Bake a day ahead, cool fully and refrigerate covered before slicing. Keep parchment between layers to prevent sticking.
