Dinner · Bean and pasta soup
Borlotti Pasta e Fagioli
The jarred borlotti beans are already cooked, so they go in near the end. Small pasta releases enough starch to turn a simple tomato broth into a substantial soup.

Ingredients
1 jar (13 ounces) cooked borlotti beans, drained and rinsedJovial: USDA Organic
1 tablespoon olive oilBragg: USDA Organic
1/2 teaspoon dried rosemary, crushedFrontier Herb: USDA Organic- 1 small onion, finely diced
- 1 carrot, finely diced
- 2 garlic cloves, minced
- 1 can (14.5 ounces) diced tomatoes with juices
- 3 cups water, plus more as needed
- 3/4 cup dry small wheat pasta
- 1/4 teaspoon fine salt
- 1/4 teaspoon black pepper
Amounts above are for cooking. Products are sold in retail packages; pantry extras may be needed.
Method
Soften the vegetables
Heat oil in a saucepan over medium heat. Cook onion and carrot for 7 minutes until softened; stir in garlic and rosemary for 1 minute until fragrant.
Build tomato broth
Add tomatoes, water, salt and pepper. Bring to a boil, reduce to a steady simmer and cook for 5 minutes until the carrot begins to turn tender.
Cook small pasta
Add pasta and simmer uncovered for 8 to 10 minutes, stirring often, until just tender. Check its package timing and add hot water if the broth reduces too far.
Finish with beans
Fold in borlotti beans and simmer gently for 2 minutes until steaming throughout. Mash a spoonful of beans into the broth if desired, then ladle into bowls.
Kitchen tips
Stir along the bottom after adding pasta to prevent sticking.
Keep extra hot water nearby; small pasta shapes absorb different amounts.
Substitutions
Cook gluten-free small pasta separately and add at serving; check all labels and adjust the cooking time to its package.
For a dairy-free bowl, omit any cheese garnish and verify pasta and bean labels; this version adds no dairy.
Storage
Cool in shallow containers and refrigerate within 2 hours at 40°F or below for up to 3 days. Reheat to a simmer with extra water.
Serving suggestions
Serve in three deep bowls with black pepper; the soup should flow slowly from the ladle rather than stand like a casserole.
Make ahead
Prepare the vegetable broth and beans a day ahead and refrigerate. Cook pasta in the reheated broth just before serving to avoid swollen noodles.

Are borlotti beans the same as dry cranberry beans?
Borlotti is also called cranberry bean, but this recipe uses cooked jarred beans. Dry beans require separate preparation and cannot be cooked in this short soup timing.
Why did my leftovers thicken?
Pasta continues to absorb broth in storage. Add water during reheating, stir gently and adjust seasoning after the soup is hot.
